Granola and nuts are a wonderful combination that aren’t only healthy and filling but are also good for the planet when compared to other food types. Quick and easy to make vegan granola is an ideal way to start a day or perfect for a healthy midday snack or lunch box filler for the young ones. This simple, vegan granola recipe from Sue has been a favourite of ours for years. And, even though we may be biased, we think it tastes much better than anything you can buy in shops! So, before you go and splash out on vegan granola why not try make it yourself?

Vegan Granola Recipe

Making vegan granola couldn’t be easier, just follow the steps below.

  1. Turn on oven to 180c
  2. Mix 3 x tbspn Coconut Oil, 1 x tbspn Maple Syrup and 2 x tspn Cinnamon. Melt until liquid in pan or in microwave. (Use butter in place of coconut oil and honey in place of maple syrup if you prefer)
  3. Mix liquid with 500g of Oatflakes (or combination of different grains) until all oats are covered.
  4. Bake for 15-20 mins until golden. Remove from oven and allow to cool.

Vegan Granola Hearts Good Snacks

Once the golden granola goodness has cooled it’s now time for you to add your twist to your vegan granola. Mix the granola with nuts, seeds and dried fruits to your hearts content. We like Pecans, Almonds, Sunflower Seeds, Pumpkin Seeds and Sesame Seeds but everyone has their own favourites! Our healthy snacks like Cranberry, Goji and Seed Mix or our Fruit and Nut Mix

Vegan Granola Topped With Fruit & Yoghurt

Once you’ve added your secret blend of nuts, seeds and dried fruit it’s almost time to enjoy your vegan granola mix. Add some fresh fruit and yoghurt and you should be good to go! The great thing about this granola recipe is that once you have the granola base ready you can pair it with an almost unlimited number of nuts, seeds and fruits – giving you a different flavour combo each time!
