Almond, Date & Coconut Raw Bites Recipe – Delicious & healthy
We’ve had so much positive feedback about our range of Raw Food Bites, it seemed the right time to experiment with some new ideas in the kitchen. Coconut is delicious and works really well with Dates and Almonds, 2 other fabulous ingredients. We were really pleased with the result, and the kids loved them (thanks to Harry for helping it – he’s still on best behaviour since his ‘instagram incident’!
Stick to the ingredient proportions listed below, increasing if you want to make a bigger batch.
One cup/small bowl of desiccated coconut
One cup/small bowl of chopped or ground almonds
One cup/small bowl of dates and raisins (mixed)
A pinch of cinnamon
How to make Almond, Date & Coconut Raw Bites
Stick it all in a food processor or use a hand blender to whizz it all together. Once it has formed a solid mass, tip it into a tray. Pop it all in the fridge for about an hour.
If you fancy a treat, melt some chocolate and pour it over some of the chunks. Who doesn’t love a Bounty Bar?
These chunks are packed full of goodness from the dried coconut – high in manganese, which is great for bone health, selenium, iron and protein – as well as almonds which contain lots of healthy fats, fiber, protein, and vitamin E.
Although it’s all good stuff, these little bad boys are high in fat (the good kind) and calories so don’t eat them all at once.
